Winemaking: The grapes are cold soaked for two days before fermentation at 12°C. Vinification is inopen fermenters with `punching down to ensure balance phenolic extraction. Extendedmaceration in temperature controlled vats then leads to a nine month ageing process inFrench and American oak barrels before final blending.
Tasting Notes: A wine of remarkable balance with notes of black coffee and black fruits with a long softfinish. This is a memorable wine in every sense. Drink now through 2017.
